Sand Cake
- 185g butter
- 1 tp vanilla extract
- 1 ¼ caster sugar
- 3 eggs
- ⅓ cup of milk
- 1 ½ cups self-raising flour
- ⅓ cup cornflour
- Preheat oven to 180℃ fan-bake, grease 23cm square cake pan; line with baking paper.
- Beat butter, extract, sugar, eggs, milk, and sifted flours in a medium bowl with electric mixer on low speed until combined. Increase speed to medium, beat 3 min or until smooth and paler in colour. Spread mixture into the pan.
- Bake about 45mins. Stand 5mins; turn tops-side up, onto a wire rack to cool. Dust with icing sugar, if desired.
